What could be more festive than gingerbread cookies? With Christmas just a few weeks away, we’re sharing this gingerbread cookie recipe.
First of all, it makes your home smell wonderful, filling it with the comforting aroma of cinnamon, ginger, and cloves. It’s also fun to make.
Ingredients
- 3 cups all purpose flour
- 1 stick (113 g) softened unsalted butter
- 1 large egg
- ½ cup sugar
- ⅔ cup molasses
- ½ tsp salt
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ¼ tsp clove
- ¼ tsp nutmeg
INSTRUCTIONS
- In a stand mixer fitted with a paddle attachment or electric mixer, cream together the butter and brown sugar. Add the molasses, egg yolks, and vanilla and beat again.
- In a medium bowl, whisk together the flour, cinnamon, ginger, baking soda, salt, and cloves. Gradually add the dry ingredients to the wet ingredients, beating well after each addition. Stir in the almond milk.
- Shape dough into a ball, cut in half, and flatten each half into a 1-inch-thick disk. Wrap in plastic wrap and refrigerate for at least 2 hours.
- Preheat oven to 350°F and line two large baking sheets with parchment paper.
- Roll out dough on a lightly floured surface until about ¼-inch thick. Use cookie cutters to cut out desired shapes, then transfer cutouts to prepared baking sheets, rerolling leftover dough if necessary.
- Bake per sheet for 7 to 9 minutes, or until cookies are just starting to brown but still soft in the middle.
- Let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Decorate as desired.
